Our intention is to stimulate interest and create understanding of how the catering needs of every one of the millions of passengers passing through the Airport each year are satisfied. In order to do this, the pack focuses on the unique environments of both airport and in-flight catering.

This invaluable resource has been compiled with the assistance of local Teachers and has been designed in a straightforward format for ease of use in the classroom.

The pack contains: A TUTORS WORKBOOK which provides an overview of catering at the Airport, including an introduction to ALPHA Flight Services and an explanation of the process of putting together an in-flight meal, from the initial menu design, purchase of the raw ingredients, preparation of the food and compliance with specifications through to the delivery of the completed meals to the aircraft.

The workbook identifies the key elements of food safety during the preparation of the meals and looks at the arrangements made to cater for the crew during the flight.

'Ground' catering at the Airport focuses on the activites of Select Service Partner, Airport Restaurants and includes the design of product specifications and portion control within the outlets. Hazard Analysis and Critical Control Points are also covered and information is provided on the arrangements to cater for delayed passengers.

A series of suggested TASKS for use in the classroom are included throughtout the text.

The text is also supported by a series of APPENDICES which contain flow charts, examples of current specifications and forms used to monitor production and food safety.

The workbook is complemented by a series of 24 A4 SIZED PHOTOGRAPHS which provide a unique insight behind the scenes at the Airport, these may be used to mount a display or they may be incorporated into lessons.
